I’ll show you two of the best ways to bleed a tuna. The second method is called the Gill Arch Cut and is probably the best way to bleed a tuna, humanely kill a tuna, and save the meat of a tuna. Many people think the Ikejime or spike method is most humane, but I would encourage you to watch videos on it, as its not as clean as many people make it out. The other disadvantage of spiking a fish in the brain is it kills the fish and stops its heart. Without the heart beating, you cannot bleed the tuna and you can easily contaminate the meat wasting the whole the fish.
